the little seat pad idea could actually work from my experience with something like a brooks bicycle saddle.
if you could get the two pads right under your sit bones (the ischial tuberosity of your pelvis) it might work like a terry saddle.

I agree about the rear sets, If any distance riding is involved. Can't say I have ever seen a cafe' bike without rear sets. Especially with the bars that low. Still a good looking bike

it has been my experience that rearsets and clubmans transfer the riders weight off of the seat and onto the feet & hands.
IMHO
if the rider is reasonably fit (not too fat) and the ergos are correct (bars not too far forward or rearsets too low) a seat can be quite minimalist and still comfortable.

The background stuff in the shop also looks cool. I love shops that have English Wheels, if they actually use them. Now that is an art, I have tried, but seriously failed in my attempts to turn a flat piece of sheet metal into a gracefully curved object.

That looks like fun, too bad my experienced muscles and bones would reject the idea of me riding it.

I always wanted to see a Ducai fairing like that on an old 'Wing. I think it looks great! I really like the knee cutouts on the false tank, and the paint job is the perfect blend of subued and "look at me"...although the lack of rearsets makes me hope the owner had really long arms! (riding "Taco"...Snort!)
