Glad you found some answers. Others have had problems with carbs rebuilt by Pistol Pete. The builders cannot control what kind of care the shipping company gives them. The other case involved floats that were way off. No way Pete would send them like that, nor would John. Cooperation.
Whatever I suggest here should be given ample time for a moderator to delicately correct. I apologize in advance.

Has anyone had this happen to them or heard of it happening? It's a new one to me.

Is it just broke off? That does seem pretty odd.

The top 'disc' is pressed onto the shaft. Still, it would take some significant force to separate them, IMhO... Very odd, indeed!

If like the 1000 needles which are held in place loosely by a grub screw, I wonder if somewhere in its travels it got torqued down too tight essentially pressing the needle through the hole. I'm clutching at straws.

The alloy plug is hollow. It only holds the outside of the needle top. There is nothing to press on the centre where the needle comes through. And anyway, the needles are supposed to be fractionally loose for alignment purposes; if it is screwed down that tight, the pistons are ruined too since there is a machined 'stop' to prevent you doing that.

I'm glad you took my advice and pulled the carbs. You/we could have guessed all day on other stuff wrong when all of the symptoms pointed toward carbs.

I got it running today. Had a few shootings/backfire. But it has not been running any good in atleast two years. Will try it again when cold again.. dont know what happened needlevise, But after i changes to my sparecarb needles and springs,a new valve check, and semi adjusted sync/idle mix it came to life.. But i have not all hopes up yet. I have to sync them with gauges ..
