I worked on my Dad's 82 750 Nighthawk a bunch. The guys over at DOHC Customs Forum (
www.cb750c.com) are very knowledgeable about those bikes. There's a ton of info over there, but as with most other forums - the vibe is a tad bit different. Read the New Members link as they suggest - they're not very forgiving of folks breezing in and popping off questions that have been asked 100's of times.
Things that come to mind - don't alter the stock air cleaner as those carbs need the common box. Check your valve clearances, then bite the bullet and order the necessary shims - nobody has used shims in the size you need.
Other than that, those 750's run like scalded cats - and that's a good and proper way to ride 'em.
